It's been possible for quite some time to use the Flowchart Shapes in Excel to build a process map but it can be fiddly and time consuming. Instead, it's worth checking out another option, the Microsoft Visio Data Visualizer add-in.
How it works is that the add-in inserts a small table on the left of a worksheet where each step in the process is listed, along with some added directions, and a graphic image for the process map is linked ready to be refreshed any time. This add-in is remarkable in how it works. It takes a little bit of time to get comfortable but in the end's it's pretty impressive!
