Time for a Recipe - Chocolate Pudding Cake

This is an absolute favourite in our house.  Plus, it's super easy to make, doesn't need a lot of ingredients and comes together quickly.  I've even made it for Christmas Dinner Dessert and it was a bit hit.
Preheat the oven to 350 degrees.
In a 8" x 8" pan (I like to use glass but it doesn't matter).
1/3 cup Butter
1/2 cup Milk
​1 1/2 teaspoons Vanilla

3/4 cup White Sugar
​1 cup White Flour
1/4 cup Cocoa
2 teaspoons Baking Powder
1/4 teaspoon Salt
Add butter into the pan.  If using a glass pan, microwave to melt the butter.  If using a metal pan, microwave to melt in a small bowl.  Then, add the remaining ingredients.   Using a fork, mix together making sure that all is blended well and is evenly distributed.
Then, in small bowl, combine together well, 1/2 cup White Sugar, 1/2 cup Brown Sugar and 1/4 cup Cocoa.  Sprinkle this sugar mixture evenly over the cake batter.
Pour over the top 1  and 1/4 cups of Hot Water.  I know it sounds odd, but as it bakes the sugar and water will move to the bottom to become chocolate pudding.

Bake for 30 minutes until the top cake layer looks like cake when slightly lifted with a knife.  Let cool and enjoy on it's own, or add whipped cream or ice cream.
Amounts for Loaf Pan version (4" x 8") - rrecipe halved:
3 tablespoons Butter
1/4 cup Milk
​3/4 teaspoons Vanilla

6 tablespoons White Sugar
1/2 cup White Flour
2 tablespoons cup Cocoa
1 teaspoon Baking Powder
1/8 teaspoon Salt
For the topping, use 1/4 cup White Sugar, 1/4 cup Brown Sugar and 2 tablespoons Cocoa.  For the water, use 1/2 cup plus 2 tablespoons.

It's Chocolate Sauce Season!

Wash well with baking soda a hot water a mason jar and dry well.
In medium saucepan combine well:
  • 1 ½ cup white sugar
  • ¾ cup cocoa
  • 1/8 tsp salt
Stir in:
  • ¾ cup water
  • 2 tbsp corn syrup
  • 1 tbsp brewed coffee
Remove from Heat and stir in:
  • ½ tablespoon vanilla
Bring to a boil; reduce heat and cook for a few minutes stirring well.  Strain through a tight sieve into a 2-cup measuring cup.  Then pour into the mason jar.  Let cool.  Cover with a tight lid.  Store in fridge.  Sauce will get thicker as it gets cold.  Great on ice cream.

Best Apple Crisp

A quick and easy treat.
Have ready an 8” x 8” baking pan.  Preheat oven to 375 degrees.

  1. Peel and slice 6 apples.
  2. Place into the baking pan.
  3. Mix well into apples, 1/3 cup white sugar, 2 tablespoons flour, ¾ teaspoon cinnamon, 2 tablespoons lemon juice and 1 tablespoon butter (split into small pieces)
  4. In a medium size bowl, mix together ¾ cup light brown sugar, ¾ cup white all purpose flours, 1/3 cup plus 1 tablespoon unsalted butter (also broken up into small pea-size pieces) and a pinch of salt.  Mix well.  Sprinkle over apples and smooth down evenly.
  5. Cover with foil.  Bake for approximately 45 minutes until lightly browned and bubbly.
  6. Serve with ice cream or whipped cream of on its own – delicious!

Note – can also be cooked in the microwave, uncovered, for 15 minutes on high.
